There’s a temptation, when you build infrastructure for a living, to describe your technology as the answer. We’d rather be straight with you. Anaerobic digestion is not the first-best solution to the food waste problem. It isn’t even second. The most effective thing any community can do about wasted food is to stop wasting it — and no digester, however efficient, recovers the water, fuel, fertilizer, labor, and refrigeration that went into growing and moving food that nobody ate. Researchers at ReFED are explicit on this point: prevention outperforms composting and digestion, because prevention avoids the entire upstream footprint rather than salvaging value at the end of it.

The Hierarchy, In Plain Terms

The order of operations is not complicated. First, don’t generate the waste — better forecasting, better portioning, better storage, better date labeling. Second, feed people; edible surplus belongs with food rescue organizations, not in any processing stream. Third, feed animals where regulations allow it. Only after those options are exhausted does recovery come into play: digestion, composting, and the other pathways that turn organic material back into energy and soil. Landfill sits at the bottom, and it’s where roughly three-quarters of American food waste still ends up.

Why That Bottom Tier Matters So Much

Here’s the uncomfortable arithmetic that keeps recovery infrastructure urgent even though it ranks fourth. If global food loss and waste were a country, it would rank third in greenhouse gas emissions, behind only the United States and China. In the U.S., about 29 percent of food goes unsold or uneaten each year, generating emissions comparable to 51 million cars. Prevention is winning ground, but it is winning slowly, and it will never reach one hundred percent. Coffee grounds, peels, trimmings, bones, spoiled loads, and inedible byproducts are a permanent feature of any food system. The question isn’t whether that residual stream exists — it’s where it goes.

Recovery Is the Floor, Not the Ceiling

That’s the honest case for digestion: it’s the best available answer for material that has already exhausted the higher tiers. When organics go to a landfill, they break down without oxygen and release methane into the atmosphere with no useful return. When the same material goes through a sealed digester, the methane becomes energy and the leftover digestate becomes a nutrient-rich soil amendment whose liquid fraction returns water to productive use. EPA analysis has found anaerobic digestion carries greater greenhouse gas reduction potential than composting and other alternatives, largely because it produces usable renewable gas alongside the soil product. Same molecules, radically different outcome — determined entirely by the endpoint.

Building for the Waste You Can’t Prevent

The practical implication is that prevention programs and recovery infrastructure are not competitors for the same budget line. A community that runs an aggressive prevention campaign and a strong food rescue network will still have organic material to manage — probably cleaner and more consistent material, which happens to make better feedstock. Meanwhile, ReFED’s modeling suggests full implementation of the solution set could cut 77 million metric tons of CO2 equivalent annually while returning $62 billion in economic value. That figure isn’t achievable through prevention alone or recovery alone. It requires both, sequenced correctly.

The Version Worth Telling

We think the sustainability conversation gets stronger, not weaker, when the people building the machines admit what the machines can’t do. A digester doesn’t absolve a grocery chain of over-ordering or a household of forgetting the crisper drawer. What it does is ensure that the material genuinely beyond saving stops being a climate liability and starts being an asset. Getting the hierarchy right isn’t a rhetorical exercise — it’s how a community avoids building capacity for waste it should have prevented, and how it makes sure the waste it couldn’t prevent finally has somewhere useful to go.
